Homemade Salsa

Let’s just be honest. I love salsa. Not just like it, LOVE it. Basically, salsa is what makes my world go ’round. Bronson and I can polish off a good bowl of salsa like this in one setting, sad but  true. When I am craving it at home, I whip up this little recipe and enjoy it with chips as a snack or with a meal.  This salsa is super easy to make and tastes so good. You can increase or decrease amounts depending on the portion size you desire.

Serving size: Medium-Sized Bowl

6-8 Cups Chopped Tomatoes (Roma, Beefsteak or  other, just make sure they are very ripe)

1/2 Cup Chopped Onions

1/2 Cup Jalapenos (fresh or jar)

2 Tbs. Minced Garlic 

Garlic Salt

Salt & Pepper

1 cup Fresh Cilantro (optional)

Chop all fresh ingredients. Place in food processor or blender. (Once again, may I suggest the Ninja Food Processor/Blender? A-Mazing! Available at Wal-Mart. High price tag of $89 but so efficient.) After blended, pour into bowl and add the garlic salt, salt and pepper to taste. Stir together and enjoy with chips!

Roasted Tomato Basil Soup

This soup is seriously delicious. It tastes like it came straight from a restaurant and the best part is, it’s easy to make. Enjoy!
 
  • 4 cups Tomatoes, cut in halves
  • 1 cup Onion, chopped
  • Tbs.  Minced garlic
  • 1 can chicken broth
  • tsp. oregano
  • tsp. basil
  • olive oil
  • red pepper flakes (optional)
  • fresh basil (optional)
  • feta cheese (optional)

Preparation Instructions

Preheat oven to 350 degrees.

Place tomatoes, onions and garlic in a bowl. Add some olive oil to the bowl and stir together, making sure tomatoes are well coated in mixture.  Place the mixture on a cookie sheet or in a cast iron skillet. Add the basil, oregano, salt and pepper to the top. Sprinkle some red pepper flakes on top for a little extra flavor. Roast for about 45 minutes. Take out and scoop mixture into a blender. Blend up until smooth. Add the broth. Pour soup into a sauce pan and simmer over medium heat for about 15 minutes. Add in some more basil and a few dashes of pepper. Garnish with Parmesan cheese and fresh basil if desired. I also like to throw some feta cheese in my bowl.

Serve with crackers or even better, grilled cheese sandwiches!

My Graduate School Experience

When I first started thinking about going back to school, I contemplated the idea of law school. I actually took the LSAT, looked at school options and really considered the process. I came to the conclusion that working full-time would only allow me to go to school part-time. With that being said, it would have taken me four-five years before I actually completed my law degree. Therefore, I decided that law school was not for me at this point in my life. I knew I wanted to further my education, I just did not know how. I then decided to look at graduate schools. I had never once thought about attending graduate school up to this point. I looked at a few surrounding colleges and decided UCO was my best option. I applied and was accepted within a couple of weeks. I enrolled in nine hours and began classes a couple of weeks after that. That was in August of 2011.

After my first semester, I decided I wanted to expedite this process and finish as soon as possible. I did not mind the school work but the late nights being away from home and making the 35-minute commute two-three times a week got old fast. I decided to take an intersession course during Christmas break which means it is a three-hour course condensed into 8 class periods. Since I was working at the Capitol during this time, I chose a class that ranged from 4:15-9:45. This class was titled “The Jury System” and ended up being my favorite class at UCO. We learned about the court system, the jury selection process and even got to watch some neat documentaries about juries and even some movies such as “My Cousin Vinny”. Once this class was over, I had 12 hours down and 24 to go, since the program has a 36-hour requirement. I had a total of three A’s and one B one my report card at this time.

In the Spring semester, I enrolled in 9 hours which proved to be a little more difficult since session was back in at the Capitol and I was working more hours with less time to dedicate to homework. I was busy at work and I was in class three times a week during the evenings every week. It was tough at times but definitely do-able. As I looked ahead at the upcoming summer semester, I decided I did not want to sit in a classroom four days a week during the summer. I decided to check out a study tour. I found one that was going to France in July. I decided to give it a shot so I enrolled, paid my money and started the process. I was told I could bring a companion so my mom excitedly decided to go with me. I could write a book about my experience in France. It was overwhelming, out of my “comfort zone” and frustrating. However, it was the best trip I have ever taken in my life. First of all, I was able to experience a new culture in an educational way. Secondly, it allowed my mom and me to bond as mother and daughter. We spent two solid weeks together and had a blast. I laughed until I cried many times on that trip. We saw the Eiffel Tower, stuck our toes in the sand along the North Atlantic, saw the Mona Lisa and ate some really good and really bad French food. As I look back, I wish I would have relished that trip even more than I did. I missed Bronson so much that it was hard to enjoy it at times. Spending time with my mom was worth everything though and we made some many precious memories. We attended the International Film Festival in La Rochelle and watched movies that were mostly in French with English subtitles. We developed a love for Buster Keaton, a famous film director in the 1920s silent film era. We experienced “real” jet lag for the first time. A ten-hour flight, a three-hour train ride and an eight-hour time difference will do that to ya! For this study abroad tour, I earned 6 hours of course credit with A grades.

For my last semester, I chose to to take another full load, 9 graduate course hours. I started a new job at SandRidge during this time which made it more difficult to study throughout my last semester. However, I gave it my best shot and ended up with two B’s and one A during my last semester. My cumulative GPA was 3.66 which was not too bad considering I did the whole program while working full-time, being an active volunteer in the community to earn scholarship money and continuing to be a wife to my very understanding husband.

I am happy to say that all the late nights, the long hours and the never-ending paper assignments were all worth it. I now have a Master’s degree in Public Administration and I could not be more proud. I found a quote that describes this whole experience perfectly. I know that I could not have accomplished this feat without God’s grace and blessings. Therefore I believe: “Faith makes things possible, not easy”.

Congratulations to Ashley Schubert, the SandRidge Fitness Center Member of the Month for November! 

What motivates you to work out?  I believe that living a healthy lifestyle is so important. Working out, eating right and staying active enables us to be the best that we can be in all aspects of life. The SandRidge Fitness Center allows me to exercise daily and fit it into my work schedule.   

What is your favorite thing about the SandRidge Fitness Center?  I really like the atmosphere of the fitness center. Corry and Andy are great, along with the other staff. I like working out alongside my co-workers and getting to know them on a personal level. I like the many choices in workout equipment and the knowledge that I can go in and get a good workout in during my lunch hour. I am very competitive so the challenges are a great inspiration to workout even harder! 

What music do you listen to while working out?  Usually just whatever is on at the gym. If I’m listening to my iPod, it ranges from Christian to country to some old school jock jams and even a little Aerosmith.  

What is your favorite exercise?  I love walking on the treadmill. It allows me to walk fast and increase the incline as I go. It tells me my mileage and allows me to see how many calories I burn in each setting.

What is your least favorite exercise?  Running and I have a love/hate relationship. I do not enjoy running but I’m trying to learn to like it more. I love the way it makes me feel when I’m finished so I try to use that as a motivator. I am on the SandRidge Running team so I’m looking forward to the upcoming opportunities to strengthen my running abilities.

Cardio, weights or both?  I like to do both. I definitely do more cardio than weights. I alternate between the treadmill and the Elliptical machine for my cardio and I do weight training for my arms and legs. I prefer the free weights when focusing on my arms and like doing lunges and squats on the Bosu ball for my legs. I also try to do a 5-minute ab workout a few times each week.

Do you prefer taking Fitness classes or working out on your own?  I like them both. The classes are a great way to motivate me to workout when I need an extra push. I enjoy Andy’s Pilates class when I need a good stretch and Kim’s classes are always good when I need to sweat! Working out on my own is effective when I want to target a specific area or focus on cardio for the day.

How long have you been using the Fitness Center?  Since I started at SandRidge in July 2011.

Corn, Pepper & Mushroom Soup

This is similar to the corn and cheese chowder recipe with a few additions. I have been making this weekly this Winter. It is easy, delicious and actually pretty healthy.

Serving size: 4

Ingredients

Tbsp butter

Bell pepper (I like to use red or green to add color)

Fresh mushrooms

Corn (frozen or can)

1/4 cup wheat flour

1 can chicken broth

2 cups milk

2 tomatoes

Shredded cheese

Tortilla chips

Directions

Place butter in pot with heat set around medium/medium-high. Chop bell peppers and add to pan. Chop mushrooms and add to pan. Cook peppers and mushrooms while stirring to prevent burning. Add in corn and heat through.  Sprinkle flour on top and stir. Add chicken broth and let thicken for a couple of minutes. Add milk and stir together well. Turn down heat and let simmer for 15 minutes. Throw in a couple of diced up tomatoes. Add some salt and pepper for flavoring. Turn off heat and spoon into bowls quickly. Add some shredded cheese to the top. Serve with tortilla chips.

Save the leftovers (if there are any) and eat for lunch the next day.

My Strawberry Banana Smoothie

I make this in my new Ninja Food Processor/Blender. It is so awesome! If you need a new food processor that also serves as a blender, this is the one to get. It has a high price tag of $89 at Wal-Mart but it is the best I have ever used! Now on to the smoothie…

1st step—Freeze a banana before making the smoothie

Ingredients

1 cup strawberry yogurt

1/2 cup milk

1 frozen banana (just lay in warm water for a couple of minutes until thawed and then peel and place in blender)

1 scoop peanut butter

frozen strawberries (I just throw in a handful)

protein powder (optional)

granola

 

Directions

Put all ingredients in the blender, except for the granola. Blend together, empty blended contents into cup, add granola on top, stick a spoon in and ENJOY! Delicious and nutritious! 🙂
